– Kefir grains. 1 to 2 tablespoons of these grains will be needed for a jar that holds 3 to 4 cups.
– A Nylon or stainless steel strainer. A tea strainer might do the trick
– A container or bowel. This will be used to strain the kefir later.
Follow these steps
– Take 1 or 2 tablespoons of kefir grains and add them to the bottom of the jar.
– Add the milk. How much milk you add will depend on the size of your jar. In this example I would add around 3 cups. The main key is to leave some room at the top of the jar. ¾ of the jar should be filled. A little room needs to be left for rising.
– Place the lid on the top of the jar. It should be left a little loose. This allows the carbon dioxide to escape for proper fermentation. Living the top loose should also make for a less sour taste.
– Just leave it sit at room temperature. How long you leave it sit depends on how thick you want it and how mild you want your kefir to be. I recommend that you go for about 24 hours.
– Once it has had time to ferment, your kefir will be ready to strain. Simply poor the kefir into a strainer. This will allow you to take those grains that are left over and reuse them for another batch.
That’s basically all there is to making kefir. The liquid kefir that is left can be drunk on its own or be used to make other foods out of it. You can add it to smoothies, drink it plain, make kefir yogurt, put in your oatmeal, and even make kefir ice cream.
What if you don’t want to be bothered with all of this kefir stuff? Then you can simply take a probiotics supplement. I don’t have one in particular to recommend because there are so many to choose from. Just check an online store like drugstore.com and or amazon.com and read the reviews that are on there.
The probiotics will essentially do many of the things that the kefir will do, but I personally think kefir does a bit of a better job.
